Ingredients

- 2 cups cooked rice
- 1 cup grilled chicken, diced
- 1 cup corn, grilled
- 1/2 cup black beans, drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 avocado, sliced
- 1 lime, juiced
- Salt and pepper to taste
Instructions
- Cook rice according to package instructions.
- Grill chicken until fully cooked and dice it.
- Grill corn and cut kernels off the cob.
- In a bowl, combine rice, chicken, corn, black beans, tomatoes, onion, and cilantro.
- Add lime juice and season with salt and pepper.
- Top with avocado slices before serving.
