Description
A fresh and flavorful pasta salad inspired by street corn.
Ingredients

- 8 oz pasta
- 2 cups corn, cooked
- 1/2 cup red onion, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup cilantro, chopped
- 1/2 cup mayonnaise
- 1/4 cup lime juice
- 1 tsp chili powder
- Salt to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine corn, red onion, cherry tomatoes, and cilantro.
- Add the cooled pasta to the vegetable mixture.
- In a small bowl, mix mayonnaise, lime juice, chili powder, and salt.
- Pour the dressing over the pasta and mix well.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For extra flavor, grill the corn before adding.
- Adjust the lime juice and chili powder to your taste.
