Ingredients

  • 4 large bell peppers
  • 1 cup cooked rice
  • 1 pound ground beef
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup shredded cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the ground beef with onions and garlic.
  4. Add cooked rice, diced tomatoes, cumin, paprika, salt, and pepper to the beef mixture.
  5. Stuff the bell peppers with the mixture.
  6. Top with shredded cheese.
  7. Place the peppers in a baking dish and add a little water to the bottom.
  8. Bake for 30-35 minutes until the peppers are tender.
