- 4 bell peppers
- 1 cup quinoa
- 2 cups vegetable broth
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Preheat oven to 375°F (190°C).
- Cook quinoa in vegetable broth according to package instructions.
- In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
- Cut the tops off the bell peppers and remove seeds.
- Stuff each pepper with the quinoa mixture.
- Place stuffed peppers in a baking dish.
- Cover with foil and bake for 30 minutes.
- If using cheese, uncover and sprinkle on top. Bake for an additional 10 minutes.
