Ingredients

  • 4 bell peppers
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook quinoa in vegetable broth according to package instructions.
  3. In a bowl, mix cooked quinoa, black beans, corn, diced tomatoes, cumin, paprika, salt, and pepper.
  4. Cut the tops off the bell peppers and remove seeds.
  5. Stuff each pepper with the quinoa mixture.
  6. Place stuffed peppers in a baking dish.
  7. Cover with foil and bake for 30 minutes.
  8. If using cheese, uncover and sprinkle on top. Bake for an additional 10 minutes.
