A refreshing summer salad with a zesty lemon herb vinaigrette.
Ingredients

- 4 cups mixed greens
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine mixed greens, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper to make the vinaigrette.
- Pour the vinaigrette over the salad and toss gently to combine.
- Serve immediately.
