Description
A hearty and nutritious chili made with sweet potatoes and black beans.
Ingredients

- 2 medium sweet potatoes, peeled and diced
- 1 can black beans, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- Heat a large pot over medium heat.
- Add onion and bell pepper, sauté until softened.
- Stir in garlic, chili powder, and cumin. Cook for 1 minute.
- Add sweet potatoes, black beans, tomatoes, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 25-30 minutes.
- Season with salt and pepper.
- Serve hot.

- This chili can be stored in the refrigerator for up to 5 days.
- It freezes well for up to 3 months.
- Top with avocado or cilantro if desired.
