- 1 cup sweet potato puree (cooked and mashed)
- 1/2 cup cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 1 large egg

- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup white chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- If you haven’t already, cook the sweet potato until tender. Once cooked, let it cool slightly, then mash it until smooth.
- In a large mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
- Mix in the softened cream cheese until well combined with the butter and sugars.
- Add the egg and vanilla extract, beating until fully incorporated.
- Stir in the sweet potato puree until the mixture is smooth and creamy.
- In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. If using, fold in the white chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes, or until the edges are lightly golden and the tops are slightly crinkled.
- Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
- Enjoy these cookies warm or at room temperature.

- For a richer flavor, consider adding a pinch of ground ginger or cloves to the dough.
