Ingredients

- 2 large sweet potatoes
- 4 oz goat cheese
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp fresh thyme
Instructions
- Preheat the oven to 400°F (200°C).
- Slice sweet potatoes into 1/4 inch rounds.
- In a bowl, toss sweet potato rounds with olive oil, salt, and pepper.
- Arrange sweet potato rounds on a baking sheet.
- Bake for 25-30 minutes until tender.
- Remove from oven and let cool slightly.
- Top each round with goat cheese and thyme.
