- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1 cup shredded cheese
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Cook the rice according to package instructions.
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning and water, simmer until thickened.
- In a bowl, layer rice, beef, black beans, corn, and tomatoes.
- Top with lettuce, cheese, sour cream, and cilantro.
- Serve immediately.
