- 1 tablespoon red curry paste
- 4 cups vegetable broth
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1/2 cup chopped cilantro
- 1 cup dumplings (store-bought or homemade)
- 1 cup sliced mushrooms
- 1 cup chopped vegetables (bell peppers, carrots, etc.)
- Salt to taste
Instructions
- In a large pot, heat coconut milk and red curry paste over medium heat.
- Add vegetable broth, soy sauce, and lime juice. Stir well.
- Bring the mixture to a simmer.
- Add dumplings, mushrooms, and chopped vegetables.
- Cook until dumplings are tender, about 10 minutes.
- Stir in chopped cilantro before serving.
Notes
- Adjust the spice level by adding more or less curry paste.
- Use any vegetables you prefer in the soup.
- This soup can be served with rice for a heartier meal.
