Description

A spicy and flavorful Thai noodle dish.


Ingredients

  • 8 oz flat rice noodles
  • 2 tbsp vegetable oil
  • 2 cloves garlic, minced
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, julienned
  • 1 cup baby corn, sliced
  • 2 eggs, beaten
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • 1 tsp chili paste
  • Fresh basil leaves for garnish

Instructions

  1. Cook the rice noodles according to the package instructions.
  2. Heat oil in a large pan over medium heat.
  3. Add garlic and sauté for 1 minute.
  4. Add bell peppers, broccoli, carrots, and baby corn; stir-fry for 5 minutes.
  5. Push the vegetables to one side and add beaten eggs; scramble until cooked.
  6. Add cooked noodles to the pan.
  7. Pour in soy sauce, oyster sauce, fish sauce, sugar, and chili paste; toss everything together.
  8. Cook for another 2-3 minutes.
  9. Garnish with fresh basil before serving.

Notes

  • Adjust spice level by adding more or less chili paste.
  • Use any vegetables you prefer.
  • Serve immediately for best texture.
