A spicy and flavorful Thai noodle dish.
Ingredients

- 8 oz flat rice noodles
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, julienned
- 1 cup baby corn, sliced
- 2 eggs, beaten
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp fish sauce
- 1 tsp sugar
- 1 tsp chili paste
- Fresh basil leaves for garnish
Instructions
- Cook the rice noodles according to the package instructions.
- Heat oil in a large pan over medium heat.
- Add garlic and sauté for 1 minute.
- Add bell peppers, broccoli, carrots, and baby corn; stir-fry for 5 minutes.
- Push the vegetables to one side and add beaten eggs; scramble until cooked.
- Add cooked noodles to the pan.
- Pour in soy sauce, oyster sauce, fish sauce, sugar, and chili paste; toss everything together.
- Cook for another 2-3 minutes.
- Garnish with fresh basil before serving.
Notes
- Adjust spice level by adding more or less chili paste.
- Use any vegetables you prefer.
- Serve immediately for best texture.
