  • 1/4 cup water
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 1/4 cup chopped peanuts for garnish
  • Fresh cilantro for garnish

Instructions

  1. Cook the rice noodles according to package instructions. Drain and set aside.
  2. In a pan, cook the diced chicken over medium heat until fully cooked.
  3. In a bowl, mix peanut butter, soy sauce, honey, garlic, ginger, lime juice, and water to create the sauce.
  4. Add mixed vegetables to the pan with chicken and sauté for a few minutes.
  5. Pour the peanut sauce over the chicken and vegetables. Stir to combine.
  6. Add the cooked noodles to the pan and mix until everything is well coated.
  7. Serve in bowls and garnish with chopped peanuts and cilantro.
