- 1 lb chicken breast, diced
- 8 oz rice noodles
- 1 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon lime juice
- 1/4 cup water
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 1/4 cup chopped peanuts for garnish
- Fresh cilantro for garnish
Instructions
- Cook the rice noodles according to package instructions. Drain and set aside.
- In a pan, cook the diced chicken over medium heat until fully cooked.
- In a bowl, mix peanut butter, soy sauce, honey, garlic, ginger, lime juice, and water to create the sauce.
- Add mixed vegetables to the pan with chicken and sauté for a few minutes.
- Pour the peanut sauce over the chicken and vegetables. Stir to combine.
- Add the cooked noodles to the pan and mix until everything is well coated.
- Serve in bowls and garnish with chopped peanuts and cilantro.
Notes
- Adjust the spice level by adding chili flakes if desired.
- Use tofu instead of chicken for a vegetarian option.
- Store leftovers in an airtight container in the fridge for up to 3 days.
