A flavorful Thai-inspired soup with potstickers.
Ingredients

- 1 package of potstickers (about 12 pieces)
- 4 cups chicken or vegetable broth
- 1 cup sliced mushrooms
- 1 cup bok choy, chopped
- 1 red bell pepper, sliced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- In a large pot, heat broth over medium heat.
- Add garlic, ginger, and mushrooms. Cook for 5 minutes.
- Stir in bok choy and bell pepper. Cook for another 3 minutes.
- Add potstickers to the pot and simmer for 5-7 minutes.
- Stir in soy sauce and lime juice.
- Serve hot, garnished with fresh cilantro.
Notes
- Use frozen or fresh potstickers.
- Adjust vegetables based on preference.
- Add chili for spice if desired.
