A refreshing and nutritious salad packed with quinoa, vegetables, and a creamy peanut dressing.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 1 cup carrots, grated
  • 1/2 cup green onions, sliced
  • 1/2 cup peanuts, chopped
  • 1/4 cup peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
  4. Remove from heat and let it sit for 5 minutes. Fluff with a fork.
  5. In a bowl, mix peanut butter, soy sauce, lime juice, honey, and garlic to make the dressing.
  6. In a large bowl, combine cooked quinoa, bell peppers, cucumber, carrots, green onions, and peanuts.
  7. Pour dressing over salad and mix well.
  8. Season with salt and pepper to taste.
  9. Serve chilled or at room temperature.

Notes

  • Store leftovers in an airtight container in the fridge.
  • Adjust the dressing ingredients to taste.
