A refreshing and nutritious salad packed with quinoa, vegetables, and a creamy peanut dressing.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 cup bell peppers, diced
- 1 cup cucumber, diced
- 1 cup carrots, grated
- 1/2 cup green onions, sliced
- 1/2 cup peanuts, chopped
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon garlic, minced
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes or until water is absorbed.
- Remove from heat and let it sit for 5 minutes. Fluff with a fork.
- In a bowl, mix peanut butter, soy sauce, lime juice, honey, and garlic to make the dressing.
- In a large bowl, combine cooked quinoa, bell peppers, cucumber, carrots, green onions, and peanuts.
- Pour dressing over salad and mix well.
- Season with salt and pepper to taste.
- Serve chilled or at room temperature.
Notes
- Store leftovers in an airtight container in the fridge.
- Adjust the dressing ingredients to taste.
- Add more vegetables if desired.
