A fresh and healthy Thai quinoa salad packed with vibrant flavors.
Ingredients

- 1 cup quinoa
- 2 cups water
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1 cup shredded carrots
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped green onions
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 teaspoon minced garlic
- 1/4 teaspoon crushed red pepper flakes
Instructions
- Rinse quinoa under cold water.
- In a pot, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let it sit for 5 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine bell pepper, cucumber, carrots, cilantro, and green onions.
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, honey, garlic, and red pepper flakes.
- Add cooled quinoa to the vegetable mixture.
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
Notes
- Adjust the spice level by adding more or less red pepper flakes.
- This salad can be made a day ahead for better flavor.
- Store leftovers in an airtight container in the fridge.
