Description
A flavorful Thai shrimp soup with herbs and spices.
Ingredients

- 1 lb shrimp, peeled and deveined
- 4 cups chicken broth
- 1 can coconut milk
- 2 stalks lemongrass, chopped
- 3 kaffir lime leaves
- 1 inch ginger, sliced
- 2–3 Thai chilies, sliced
- 1 cup mushrooms, sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- Cilantro for garnish
Instructions
- In a pot, combine chicken broth, lemongrass, lime leaves, ginger, and chilies.
- Bring to a boil and simmer for 10 minutes.
- Add mushrooms and cook for another 5 minutes.
- Stir in shrimp and cook until they turn pink.
- Add coconut milk, fish sauce, and lime juice.
- Remove from heat and garnish with cilantro.
Notes
- Adjust chili quantity for desired spice level.
- Serve hot with rice or noodles.
