Three-Cheese Spinach Roll-Ups are savory, cheesy delights wrapped in fresh spinach.
Ingredients

- 2 cups fresh spinach
- 1/2 cup ricotta cheese
- 1/2 cup mozzarella cheese, shredded
- 1/2 cup parmesan cheese, grated
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 8 large tortillas
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix ricotta, mozzarella, parmesan, garlic powder, salt, and pepper.
- Lay a tortilla flat and spread a layer of the cheese mixture on it.
- Add a handful of spinach on top of the cheese mixture.
- Roll the tortilla tightly and place it seam-side down in a baking dish.
- Repeat with remaining tortillas and filling.
- Drizzle olive oil over the top of the roll-ups.
- Bake for 20 minutes until heated through and slightly golden.
Notes
- Use fresh spinach for best flavor.
- Substitute cheeses as desired.
- Serve with marinara sauce for dipping.
