Three-Cheese Spinach Roll-Ups are savory, cheesy delights wrapped in fresh spinach.


Ingredients

  • 2 cups fresh spinach
  • 1/2 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1/2 cup parmesan cheese, grated
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 8 large tortillas

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix ricotta, mozzarella, parmesan, garlic powder, salt, and pepper.
  3. Lay a tortilla flat and spread a layer of the cheese mixture on it.
  4. Add a handful of spinach on top of the cheese mixture.
  5. Roll the tortilla tightly and place it seam-side down in a baking dish.
  6. Repeat with remaining tortillas and filling.
  7. Drizzle olive oil over the top of the roll-ups.
  8. Bake for 20 minutes until heated through and slightly golden.
