  • 1/2 cup brown sugar, packed (100 g)
  • 1 teaspoon vanilla extract (5 ml)
  • 1/4 teaspoon salt (1.5 g)
  • 2 large egg yolks
  • 1/2 cup jam or chocolate (for filling, any flavor of your choice)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine softened butter, granulated sugar, and brown sugar. Beat until light and fluffy.
  3. Add egg yolks and vanilla extract, mixing until well combined.
  4. Scoop about 1 tablespoon of dough, roll into a ball, and place on the baking sheet, spacing them 2 inches apart.
  5. Using your thumb or the back of a spoon, create an indentation in the center of each dough ball.
  6. Fill each indentation with about 1/2 teaspoon of your chosen jam or melted chocolate.
  7. Bake for 12-15 minutes or until the edges are lightly golden brown.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
