Grilled tofu vegetable kabobs with a mix of vibrant vegetables.


Ingredients

  • 1 block firm tofu, cubed
  • 1 bell pepper, cut into squares
  • 1 zucchini, sliced
  • 1 red onion, cut into chunks
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. Press the tofu to remove excess water and cut into cubes.
  3. In a bowl, mix olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
  4. Add tofu and vegetables to the bowl and toss to coat.
  5. Thread the tofu and vegetables onto skewers, alternating as desired.
  6. Place skewers on the grill and cook for 10-15 minutes, turning occasionally.
  7. Remove from the grill and serve hot.

Notes

  • Soak wooden skewers in water for 30 minutes to prevent burning.
  • Feel free to add any other vegetables you like.
  • Serve with a dipping sauce if desired.
