Grilled tofu vegetable kabobs with a mix of vibrant vegetables.
Ingredients

- 1 block firm tofu, cubed
- 1 bell pepper, cut into squares
- 1 zucchini, sliced
- 1 red onion, cut into chunks
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- Press the tofu to remove excess water and cut into cubes.
- In a bowl, mix olive oil, soy sauce, garlic powder, paprika, salt, and pepper.
- Add tofu and vegetables to the bowl and toss to coat.
- Thread the tofu and vegetables onto skewers, alternating as desired.
- Place skewers on the grill and cook for 10-15 minutes, turning occasionally.
- Remove from the grill and serve hot.
Notes
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Feel free to add any other vegetables you like.
- Serve with a dipping sauce if desired.
