Ingredients

- 250g tortellini
- 100g pancetta, diced
- 2 large eggs
- 50g Parmesan cheese, grated
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- Cook the tortellini according to package instructions.
- In a pan, cook the pancetta until crispy.
- Add minced garlic to the pancetta and cook for 1 minute.
- In a bowl, whisk together eggs and Parmesan cheese.
- Drain tortellini and add to the pan with pancetta.
- Remove the pan from heat and quickly mix in the egg and cheese mixture.
- Season with salt and pepper.
- Serve immediately, garnished with fresh parsley.
Notes
- Use fresh tortellini for best results.
- You can substitute pancetta with bacon.
- Do not cook the egg mixture over direct heat to avoid scrambling.
