- 4 gluten-free tortillas
- 1 can black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt to taste
- Cilantro for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Place the tortillas in a muffin tin to form bowls.
- Bake for 10-12 minutes or until crispy.
- In a bowl, mix black beans, corn, avocado, tomatoes, red onion, lime juice, cumin, and salt.
- Fill each tortilla bowl with the mixture.
- Garnish with cilantro before serving.
