Description

This Treacle Citrus Pudding Cake is a moist and flavorful dessert that combines the rich taste of treacle with the freshness of citrus.

Ingredients

Scale
  • 200 grams (1 cup) all-purpose flour
  • 200 grams (1 cup) brown sugar, packed
  • 100 grams (1/2 cup) unsalted butter, softened
  • 3 large eggs
  • 200 ml (3/4 cup) milk
  • 100 ml (1/3 cup) treacle (or golden syrup)
  • Zest of 2 medium oranges
  • Zest of 1 lemon
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Pinch of salt

Instructions

  1. Preheat your oven to 180°C (350°F). Grease and line a round cake pan (approximately 9 inches) with parchment paper.
  2. In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
  4. Add the treacle, orange juice, and lemon juice to the mixture, stirring until well combined.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and citrus zests.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Pour the batter into the prepared cake pan, smoothing the top with a spatula.
  8. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Transfer it to a wire rack to cool completely.
  10. Once cooled, slice the cake and serve it on a plate.

Notes

  • For an extra citrusy flavor, add more zest or a splash of citrus liqueur.
