- 200 ml (3/4 cup) milk

- Zest of 2 medium oranges
- Zest of 1 lemon
- Juice of 1 orange
- Juice of 1 lemon
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- Pinch of salt
Instructions
- Preheat your oven to 180°C (350°F). Grease and line a round cake pan (approximately 9 inches) with parchment paper.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy, about 3-5 minutes.
- Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next.
- Add the treacle, orange juice, and lemon juice to the mixture, stirring until well combined.
- In a separate bowl, whisk together the flour, baking powder, baking soda, salt, and citrus zests.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
- Pour the batter into the prepared cake pan, smoothing the top with a spatula.
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and allow it to cool in the pan for about 10 minutes. Transfer it to a wire rack to cool completely.
- Once cooled, slice the cake and serve it on a plate.
Notes
- For an extra citrusy flavor, add more zest or a splash of citrus liqueur.
- Warm some additional treacle and drizzle it over the top for a richer glaze.
