Description
A delicious vegan calzone filled with veggies and cheese.
Ingredients

- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon olive oil
- 1/2 cup warm water
- 1 cup spinach, chopped
- 1 cup mushrooms, sliced
- 1/2 cup onion, diced
- 1 cup vegan cheese
- 1 teaspoon Italian seasoning
- 1 tablespoon nutritional yeast
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, mix flour and salt.
- Add olive oil and warm water. Knead until smooth.
- Let the dough rest for 30 minutes.
- Sauté spinach, mushrooms, and onion until soft.
- Mix in vegan cheese, Italian seasoning, and nutritional yeast.
- Roll out the dough and cut into circles.
- Spoon filling onto one half of each circle.
- Fold and seal the edges.
- Bake for 20-25 minutes until golden.
Notes
- Serve with marinara sauce.
- Feel free to add your favorite vegetables.
- Store leftovers in the refrigerator for up to 3 days.
