- 2 cups cashews, soaked
- 1 cup coconut cream
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 cup lemon juice
- 2 apples, diced
- 1 cup graham cracker crumbs
- 1/4 cup vegan butter, melted
- 1/2 cup caramel sauce (vegan)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix graham cracker crumbs and melted vegan butter.
- Press the mixture into the bottom of a springform pan.
- Blend soaked cashews, coconut cream, maple syrup, coconut oil, vanilla extract, and lemon juice until smooth.
- Pour the cheesecake mixture over the crust.
- Bake for 30 minutes, then let cool.
- Top with diced apples and drizzle with vegan caramel sauce.
- Chill in the fridge for at least 4 hours before serving.

- Ensure cashews are soaked for at least 4 hours.
- Use fresh apples for the best flavor.
