A simple and delicious vegan chickpea curry recipe that is oil-free.
Ingredients

- 1 can chickpeas, drained and rinsed
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 can coconut milk
- 1 can diced tomatoes
- 2 teaspoons curry powder
- 1 teaspoon cumin
- 1 teaspoon turmeric
- Salt to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, sauté onion, garlic, and ginger until soft.
- Add curry powder, cumin, and turmeric. Stir for 1 minute.
- Add chickpeas, coconut milk, and diced tomatoes. Mix well.
- Simmer for 20 minutes on low heat.
- Add salt to taste and garnish with cilantro before serving.
Notes
- Serve with rice or quinoa.
- Adjust spices to your preference.
- Store leftovers in the fridge for up to 3 days.
