Ingredients

  • 4 large russet potatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 can diced tomatoes
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 1 cup vegan cheese shreds
  • Olive oil

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into fries.
  3. Toss the fries in olive oil, salt, and bake for 30-35 minutes until crispy.
  4. In a pan, sauté onion and garlic until translucent.
  5. Add black beans, kidney beans, corn, diced tomatoes, chili powder, cumin, and salt. Cook for 10 minutes.
  6. Remove fries from the oven and top with the chili mixture.
  7. Sprinkle vegan cheese on top and return to the oven for 5 minutes until cheese melts.
  8. Serve hot.
