- 4 large russet potatoes
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 can diced tomatoes
- 1 onion, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt to taste
- 1 cup vegan cheese shreds
- Olive oil
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes into fries.
- Toss the fries in olive oil, salt, and bake for 30-35 minutes until crispy.
- In a pan, sauté onion and garlic until translucent.
- Add black beans, kidney beans, corn, diced tomatoes, chili powder, cumin, and salt. Cook for 10 minutes.
- Remove fries from the oven and top with the chili mixture.
- Sprinkle vegan cheese on top and return to the oven for 5 minutes until cheese melts.
- Serve hot.
Notes
- Feel free to add your favorite toppings like jalapeños or avocado.
- Store leftovers in an airtight container in the fridge.
