  • 1 zucchini, diced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 2 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add bell pepper, carrots, and zucchini. Cook for 5 minutes.
  4. Add diced tomatoes, kidney beans, black beans, and vegetable broth.
  5. Stir in chili powder and cumin. Season with salt and pepper.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Serve hot.
