Ingredients

- 1 cup of quinoa
- 2 cups of vegetable broth
- 1 cup of chopped mushrooms
- 1 cup of diced carrots
- 1 cup of green beans
- 1 cup of chopped kale
- 1 tablespoon of olive oil
- 2 cloves of garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water.
- In a pot, combine quinoa and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- In a skillet, heat olive oil over medium heat.
- Add garlic, mushrooms, carrots, and green beans. Sauté until soft.
- Add cooked quinoa and kale to the skillet. Stir to combine.
- Season with salt and pepper. Serve warm.

- This recipe can be made ahead of time.
- Feel free to add other seasonal vegetables.
- Pair with vegan gravy for added flavor.
