A simple recipe for vegan coconut macaroons.

- 2 cups shredded coconut
- 1/2 cup almond flour
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine shredded coconut, almond flour, maple syrup, melted coconut oil, vanilla extract, and salt.
- Mix until well combined.
- Form small balls or mounds of the mixture on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes until golden brown.
- Let cool before serving.
Notes
- Store in an airtight container.
- Can be dipped in dark chocolate for extra flavor.
- Adjust sweetness by adding more or less maple syrup.
