Ingredients

  • 1/2 cup refried beans
  • 1/4 cup vegan cheese
  • 1/4 cup diced tomatoes
  • 1/4 cup shredded lettuce
  • 1/4 cup diced onions
  • 1/4 cup guacamole
  • 1 tablespoon taco seasoning
  • 1 tablespoon oil for cooking

Instructions

  1. In a bowl, mix refried beans with taco seasoning.
  2. Lay the tortilla flat on a surface.
  3. Spread refried beans in the center of the tortilla.
  4. Add layers of vegan cheese, diced tomatoes, lettuce, onions, and guacamole.
  5. Fold the edges of the tortilla towards the center to enclose the filling.
  6. Heat oil in a skillet over medium heat.
  7. Place the folded tortilla seam side down in the skillet.
  8. Cook until golden brown, about 3-4 minutes.
  9. Flip and cook the other side until golden brown.
  10. Remove from skillet, cut in half, and serve.
