- 1 cup coconut milk
- 1/2 cup almond milk
- 1/2 cup maple syrup
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup sugar (for caramel)
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine coconut milk, almond milk, maple syrup, cornstarch, vanilla extract, and salt. Stir well.
- Cook over medium heat until the mixture thickens, stirring constantly.
- In a separate pan, heat sugar until it melts and turns golden brown. Pour it into a flan mold or ramekins.
- Pour the thickened mixture over the caramel in the mold.
- Bake in a water bath for 30-40 minutes.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- Use full-fat coconut milk for creaminess.
- Adjust sweetness according to your taste.
- Serve chilled for the best texture.
