- 4 large onions, thinly sliced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup white wine
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Crusty bread for serving

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and cook until caramelized, about 30 minutes.
- Add garlic and cook for an additional 2 minutes.
- Pour in white wine and cook until reduced by half.
- Add vegetable broth, balsamic vinegar, thyme, salt, and pepper.
- Simmer for 15 minutes.
- Serve hot with crusty bread and vegan cheese if desired.
