A delicious vegan frittata made with chickpea flour and vegetables.


Ingredients

  • 1 cup chickpea flour
  • 1 1/4 cups water
  • 1/2 tsp turmeric
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup chopped spinach
  • 1/2 cup diced bell pepper
  • 1/2 cup diced onion
  • 1/4 cup nutritional yeast

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix chickpea flour, water, turmeric, baking powder, and salt until smooth.
  3. Add spinach, bell pepper, onion, and nutritional yeast to the mixture.
  4. Pour the mixture into a greased oven-safe skillet.
  5. Bake for 25-30 minutes or until firm and golden.
  6. Let cool for a few minutes before slicing.
