A delicious vegan frittata made with chickpea flour and vegetables.
Ingredients

- 1 cup chickpea flour
- 1 1/4 cups water
- 1/2 tsp turmeric
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1 cup chopped spinach
- 1/2 cup diced bell pepper
- 1/2 cup diced onion
- 1/4 cup nutritional yeast
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix chickpea flour, water, turmeric, baking powder, and salt until smooth.
- Add spinach, bell pepper, onion, and nutritional yeast to the mixture.
- Pour the mixture into a greased oven-safe skillet.
- Bake for 25-30 minutes or until firm and golden.
- Let cool for a few minutes before slicing.
Notes
- Store leftovers in the fridge for up to 3 days.
- This frittata can be served warm or cold.
