A rich and moist vegan chocolate fruit cake that is gluten-free.
Ingredients

- 1 cup almond flour
- 1 cup gluten-free all-purpose flour
- 1 cup coconut sugar
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup almond milk
- 1/2 cup maple syrup
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup mixed dried fruits
- 1/2 cup walnuts, chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix almond flour, gluten-free flour, coconut sugar, cocoa powder, baking powder, and salt.
- In another bowl, combine almond milk, maple syrup, vegetable oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until smooth.
- Fold in the mixed dried fruits and walnuts.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.
Notes
- Store leftovers in an airtight container.
- Can be topped with vegan frosting if desired.
- Adjust the sweetness by adding more or less coconut sugar.
