Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1 cup coconut sugar
  • 1/2 cup cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup almond milk
  • 1/2 cup maple syrup
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup mixed dried fruits
  • 1/2 cup walnuts, chopped

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix almond flour, gluten-free flour, coconut sugar, cocoa powder, baking powder, and salt.
  3. In another bowl, combine almond milk, maple syrup, vegetable oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until smooth.
  5. Fold in the mixed dried fruits and walnuts.
  6. Pour the batter into a greased cake pan.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Let it cool before serving.

Notes

  • Store leftovers in an airtight container.
  • Can be topped with vegan frosting if desired.
  • Adjust the sweetness by adding more or less coconut sugar.
