Ingredients

- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1/2 cup coconut oil, melted
- 1/2 cup brown sugar
- 1/4 cup molasses
- 1 tablespoon almond milk
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, baking soda, ginger, cinnamon, nutmeg, and salt.
- In another bowl, combine melted coconut oil, brown sugar, molasses, and almond milk.
- Mix wet ingredients into dry ingredients until combined.
- Roll dough into balls and place on a baking sheet.
- Flatten each ball slightly.
- Bake for 10-12 minutes.
- Let cool before serving.
Notes
- Store in an airtight container.
- Can be decorated with vegan icing.
- Adjust spices to taste.
