- 1 cup almond flour

- 1 cup maple syrup
- 1/2 cup coconut oil, melted
- 1/2 cup unsweetened applesauce
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix grated carrots, almond flour, and gluten-free flour.
- Add maple syrup, melted coconut oil, and applesauce to the dry ingredients.
- Stir in baking powder, baking soda, cinnamon, nutmeg, salt, and vanilla extract.
- Pour the batter into a greased cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool before serving.

- Store leftovers in an airtight container.
- Can be topped with vegan cream cheese frosting.
