Ingredients

- 1 cup chickpeas, cooked
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- 4 pita breads
- 1 cup lettuce, shredded
- 1 tomato, diced
- 1 cucumber, sliced
- 1/2 cup vegan tzatziki sauce
Instructions
- In a bowl, mix chickpeas with olive oil, smoked paprika, garlic powder, onion powder, and salt.
- Heat a skillet over medium heat and add the chickpea mixture.
- Sauté for 5-7 minutes until chickpeas are slightly crispy.
- Warm the pita breads in a separate pan or microwave.
- Assemble gyros by placing chickpeas, lettuce, tomato, cucumber, and tzatziki sauce in the pita.
- Serve immediately.

- Store leftover chickpeas in the fridge for up to three days.
