A hearty vegan version of traditional Hungarian goulash.


Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 bell peppers, chopped
  • 3 medium potatoes, diced
  • 1 can diced tomatoes
  • 2 tablespoons paprika
  • 1 teaspoon caraway seeds
  • 4 cups vegetable broth
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions and garlic. Sauté until onions are translucent.
  3. Add carrots and bell peppers. Cook for 5 minutes.
  4. Add potatoes, diced tomatoes, paprika, and caraway seeds. Stir well.
  5. Pour in vegetable broth and bring to a boil.
  6. Reduce heat and simmer for 30 minutes or until vegetables are tender.
  7. Season with salt and pepper.
  8. Serve hot and enjoy.
