Description
A hearty vegan version of traditional Hungarian goulash.
Ingredients
Scale
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 bell peppers, chopped
- 3 medium potatoes, diced
- 1 can diced tomatoes
- 2 tablespoons paprika
- 1 teaspoon caraway seeds
- 4 cups vegetable broth
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions and garlic. Sauté until onions are translucent.
- Add carrots and bell peppers. Cook for 5 minutes.
- Add potatoes, diced tomatoes, paprika, and caraway seeds. Stir well.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 30 minutes or until vegetables are tender.
- Season with salt and pepper.
- Serve hot and enjoy.

- Adjust seasoning to taste.
- Serve with crusty bread for a complete meal.
