Ingredients

- 1/2 cup vegan mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon erythritol (or other keto-friendly sweetener)
- Salt and pepper to taste
Instructions
- In a large bowl, combine shredded green cabbage, red cabbage, and carrots.
- In a separate bowl, mix vegan mayonnaise, apple cider vinegar, Dijon mustard, and erythritol.
- Pour the dressing over the cabbage mixture and toss to coat.
- Add salt and pepper to taste.
- Chill in the refrigerator for at least 30 minutes before serving.
