- 8 lasagna noodles
- 2 cups spinach
- 1 cup ricotta made from tofu
- 1 cup marinara sauce
- 1/2 cup nutritional yeast
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions.
- In a bowl, mix spinach, tofu ricotta, nutritional yeast, garlic powder, onion powder, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a baking dish.
- Place a spoonful of the filling on each noodle and roll them up.
- Arrange the roll ups in the baking dish seam side down.
- Top with remaining marinara sauce.
- Bake for 25 minutes.
