A rich and gooey vegan lava cake that is gluten-free.
Ingredients

- 1 cup almond flour
- 1/2 cup cocoa powder
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- Grease ramekins with coconut oil.
- In a bowl, mix almond flour, cocoa powder, baking soda, and salt.
- In another bowl, combine maple syrup, melted coconut oil, almond milk, and vanilla extract.
- Pour wet ingredients into dry ingredients and mix until smooth.
- Pour batter into ramekins, filling them halfway.
- Bake for 15-18 minutes.
- Let cool for a few minutes, then invert onto a plate.
Notes
- Serve warm for the best lava effect.
- Top with dairy-free ice cream if desired.
- Store leftovers in the fridge for up to 2 days.
