Ingredients

- 1 cup lentils, cooked
- 1/2 cup gluten-free breadcrumbs
- 1/4 cup onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 2 cups vegetable broth
- 2 tablespoons cornstarch
- 1 tablespoon nutritional yeast
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix lentils, breadcrumbs, onion, garlic, soy sauce, Italian seasoning, salt, and pepper.
- Form the mixture into small balls and place them on a baking sheet.
- Bake for 25 minutes or until golden brown.
- In a saucepan, heat olive oil over medium heat.
- Add vegetable broth and bring to a simmer.
- Mix cornstarch with a little water and add to the broth.
- Stir until thickened, then mix in nutritional yeast.
- Serve the meatballs with gravy on top.
Notes
- Adjust seasoning to taste.
- Store leftovers in the refrigerator for up to 3 days.
- These meatballs can be frozen for later use.
