Ingredients

  • 1/2 cup gluten-free breadcrumbs
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 2 cups vegetable broth
  • 2 tablespoons cornstarch
  • 1 tablespoon nutritional yeast

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix lentils, breadcrumbs, onion, garlic, soy sauce, Italian seasoning, salt, and pepper.
  3. Form the mixture into small balls and place them on a baking sheet.
  4. Bake for 25 minutes or until golden brown.
  5. In a saucepan, heat olive oil over medium heat.
  6. Add vegetable broth and bring to a simmer.
  7. Mix cornstarch with a little water and add to the broth.
  8. Stir until thickened, then mix in nutritional yeast.
  9. Serve the meatballs with gravy on top.
