Ingredients

  • 1/2 cup bell peppers, diced
  • 2 cloves garlic, minced
  • 1/4 cup tomato sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the lentils, gluten-free breadcrumbs, onions, carrots, bell peppers, and garlic.
  3. Add the tomato sauce, soy sauce, flaxseed mixture, thyme, paprika, salt, and pepper.
  4. Mix well until combined.
  5. Transfer the mixture to a greased loaf pan and shape it into a loaf.
  6. Bake for 45-50 minutes until firm.
  7. Let it cool for a few minutes before slicing.
