A delicious vegan meatloaf that is gluten-free and packed with flavor.
Ingredients

- 1 cup cooked lentils
- 1 cup gluten-free breadcrumbs
- 1/2 cup chopped onions
- 1/2 cup grated carrots
- 1/2 cup bell peppers, diced
- 2 cloves garlic, minced
- 1/4 cup tomato sauce
- 2 tablespoons soy sauce
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, combine the lentils, gluten-free breadcrumbs, onions, carrots, bell peppers, and garlic.
- Add the tomato sauce, soy sauce, flaxseed mixture, thyme, paprika, salt, and pepper.
- Mix well until combined.
- Transfer the mixture to a greased loaf pan and shape it into a loaf.
- Bake for 45-50 minutes until firm.
- Let it cool for a few minutes before slicing.
Notes
- Store leftovers in the refrigerator for up to 3 days.
- This meatloaf can be frozen for later use.
