A hearty vegan twist on the classic French dish, mushroom bourguignon features tender mushrooms simmered in a rich red wine sauce.

- 2 tablespoons olive oil
- 1 pound mushrooms, sliced
- 1 onion, chopped
- 2 carrots, diced
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 cup red wine
- 1 tablespoon tomato paste
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add mushrooms and cook until browned.
- Add onion and carrots. Sauté until softened.
- Stir in garlic and cook for 1 minute.
- Add vegetable broth, red wine, tomato paste, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 30 minutes.
- Season with salt and pepper.
- Remove bay leaf and garnish with parsley before serving.
