A creamy and savory vegan mushroom stroganoff that is gluten-free.
Ingredients

- 12 oz mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup coconut milk
- 2 tbsp gluten-free soy sauce
- 1 tbsp olive oil
- 1 tsp thyme
- 8 oz gluten-free pasta
- Salt and pepper to taste
Instructions
- Cook gluten-free pasta according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add mushrooms, cook until softened.
- Stir in vegetable broth, coconut milk, and soy sauce.
- Add thyme, salt, and pepper. Simmer for 10 minutes.
- Combine sauce with cooked pasta. Serve hot.
Notes
- For extra flavor, add nutritional yeast.
- Adjust thickness by adding more or less broth.
- Serve with fresh parsley on top.
