- 1 1/2 cups pecans
- 1 cup maple syrup
- 1/2 cup brown sugar
- 1/4 cup coconut oil, melted
- 1/4 cup almond milk
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 pre-made vegan pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix maple syrup, brown sugar, melted coconut oil, almond milk, cornstarch, vanilla extract, and salt.
- Chop half of the pecans and mix them into the filling.
- Pour the filling into the vegan pie crust.
- Top with remaining pecans.
- Bake for 50-60 minutes until the filling is set.
- Let the pie cool before serving.
Notes
- Store leftovers in the refrigerator for up to 5 days.
- Can be served with vegan whipped cream.
- Adjust sweetness according to your taste.
