Ingredients

  • 1/2 cup almond milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 can sliced pineapple
  • Maraschino cherries

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Grease a round cake pan.
  3. Arrange pineapple slices at the bottom of the pan and place cherries in the center of each slice.
  4. In a bowl, mix flour, brown sugar, baking soda, and salt.
  5. In another bowl, combine almond milk, vegetable oil, and vanilla extract.
  6. Mix the wet ingredients into the dry ingredients until smooth.
  7. Pour the batter over the pineapple and cherries.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let it cool, then invert onto a plate.
