A delicious vegan take on the classic pineapple upside-down cake.
Ingredients

- 1 cup all-purpose flour
- 1 cup brown sugar
- 1/2 cup almond milk
- 1/4 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 can sliced pineapple
- Maraschino cherries
Instructions
- Preheat the oven to 350°F (175°C).
- Grease a round cake pan.
- Arrange pineapple slices at the bottom of the pan and place cherries in the center of each slice.
- In a bowl, mix flour, brown sugar, baking soda, and salt.
- In another bowl, combine almond milk, vegetable oil, and vanilla extract.
- Mix the wet ingredients into the dry ingredients until smooth.
- Pour the batter over the pineapple and cherries.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let it cool, then invert onto a plate.
Notes
- Store leftovers in an airtight container.
- Serve with vegan whipped cream if desired.
