Ingredients

- 4 cups potatoes, diced
- 1 cup celery, chopped
- 1 cup red onion, diced
- 1 cup vegan mayonnaise
- 2 tablespoons mustard
- 1 tablespoon apple cider vinegar
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped
Instructions
- Boil the potatoes until tender, about 15 minutes.
- Drain and let cool.
- In a large bowl, combine cooled potatoes, celery, and red onion.
- In a separate bowl, mix vegan mayonnaise, mustard, apple cider vinegar, salt, and pepper.
- Pour the dressing over the potato mixture and stir to combine.
- Garnish with fresh parsley.
- Chill in the refrigerator for at least 30 minutes before serving.
