- 2 cups pumpkin puree
- 1 cup coconut milk
- 3/4 cup brown sugar
- 1/4 cup maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon ginger
- 1/4 teaspoon salt
- 1 tablespoon cornstarch
- 1 pre-made vegan pie crust
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix pumpkin puree, coconut milk, brown sugar, and maple syrup.
- Add cinnamon, nutmeg, ginger, salt, and cornstarch. Blend until smooth.
- Pour the mixture into the vegan pie crust.
- Bake for 60 minutes or until set.
- Let it cool before serving.
Notes
- Store leftovers in the refrigerator.
- Serve with vegan whipped cream if desired.
- Can be made a day in advance.
