- 1 medium pumpkin, peeled and chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can coconut milk
- 1 tsp ginger, grated
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Heat a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add pumpkin, ginger, and cumin, cook for 5 minutes.
- Pour in vegetable broth, bring to a boil.
- Reduce heat and simmer until pumpkin is tender.
- Blend the soup until smooth.
- Stir in coconut milk, season with salt and pepper.
- Serve hot.
